Food Stamp Challenge Day 2: Meaty Monday

| September 2, 2013 | 0 Comments

You’ve heard tell of “Meatless Monday,” right, where people go completely meat-free on one day per week?  Well…..in a house where one person is completely meatless (albeit fish-friendly) and the other is extremely picky about the quality of animals she consumes, we end up going delightedly meatless pretty often.

So our fliparound of this is “Meaty Monday,” where we eat some sort of animal flesh once a week.  We sometimes will add a second day, but Mondays are traditionally a high-protein day, and we try to include some sort of fish (which Mr. GH can eat) or if we’re eating separately, I scare up some good pastured chicken or something similar.  I’ve even been known to eat Chipotle’s responsibly-raised pork on these days.

But today, it’s all about the fish.  We included this in our Whole Foods shopping trip, buy salmon burgers for this day.  I have to say that I was not impressed with the particular ones we bought — they had Asian spices, which we thought might be subtly yummy, but I think they would’ve only been subtly yummy if we’d made a similar thing from scratch. The prepared ones at Whole Foods turned out to be overwhelmingly salty, totally burying the flavor of a nice fish like salmon.  A little disappointing, given they used up $7.00 of our monthly budget.  Oh well.  Live and learn.

But we served them on our toasted  home-made burger buns, with a side of veggies, and it turned out to be a filling and nutritious meal, just right after an active Labor Day weekend.
