Food Stamp Challenge Recipes: Apple/Walnut/Oat Breakfast Bars

Whole Wheat Apple-Oat Breakfast Bars

3 cups organic whole wheat flour
3 cups thick-cut oats (not instant oatmeal – eeeeuw)
1 cup sugar
1 tablespoon cinnamon
1-1/2 teaspoons salt
1-1/2 teaspoonsbaking soda
1 cup organic walnut pieces, roughly chopped
1/4 cup organic shelled sunflower or pumpkin seeds
2-1/2 cups unsweetened applesauce
1/2 cup olive oil
3 apples, peeled, cored, and diced
3 eggs, lightly beaten

Preheat oven to 350 F.

In a large bowl combine the flour, oats, brown sugar, cinnamon, salt, baking soda, walnuts, and seeds. In a separate large bowl, whisk together the applesauce, oil and eggs.

Mix wet ingredients into the dry; stir to combine. Line a big rimmed cookie sheet with parchment paper if you have it (or  grease it well). Press the dough into a big giant bar, filling the cookie sheet.

Bake for 25-30 minutes, or until the top is firmed and smelling toasty. Let set on baking sheet a few minutes and then cut into bars with a pizza cutter and transfer to a cooling rack.

Yield: 18 giant breakfast bars!  These freeze very well and keep in the fridge for days.
