One Simple Thing: Homemade Mayonnaise in Less Than Two Minutes

Following on last week’s mustard revelation, one of the best things I started to do this year was to make my own mayonnaise.  We don’t use a lot of it, mostly tuna sandwiches, sandwich spread, and cold salads, but one look at the ingredients panel of most mayonnaise containers makes me shudder.  And to add insult to injury, the goofy containers most mayo comes in (with elaborate plastic squeezy gadget lids) are either a) impossible to clean out to recycle the container, and/or b) impossible to recycle the plastic parts, yet another something to lob into the trash.

I love the website SeriousEats.com, and it never ceases to amaze me that I still fit through doorways – their recipes invite joyful experimentation.  The year’s catch was Two Minute Mayonnaise, which is delicious, involves simple clean ingredients, and you can – should – make it right in a glass jar. The oil I use is “light olive oil” which seems to behave best and has a neutral flavor. I use an immersion blender, and make it right in a pint Mason jar, which will be exactly the right size. No immersion blender?  Check your local thrift store – there always seems to be one in mine for about $7.00.
